Chicken, chicken, chicken

Tonight's secret ingredient is chicken. 
We have roasted chicken thighs, chicken quesadillas and one chicken taquitos with shredded chicken salad. Soooo much delicious chicken! I'm surprised we're not sick of it yet. It's just soooooo awesomely yummy!

Breadcrumbs Catering

Same thing as Sodexo dinner as to how I got this dinner. Difference is, this is an outside catering company and tastes a LOT better than Sodexo so I was very happy to get to take some home to my boys.
This is a turkey smothered in gravy on the bottom left with a little bit of cranberry sauce in red, followed by chopped lettuce (from home) and a couple of garlic bread and mushroom rice. Pretty good! But it ought to be since it costs more than Sodexo....

Chicken Breasts

This is the first time we had brined chicken breasts for dinner. Usually, we get drumsticks or thighs cuz they're the best! But chicken breast is supposedly the healthiest..... Anyhoo, it's a pretty good chicken dinner!

Sodexo Dinner

At my work place at Cedars-Sinai, we have an in-house catering company called Sodexo. Sometimes we have leftovers because people who are supposed to go, don't attend the events and then whaddaya know, we'v got leftovers. Instead of trashing it, I try my best to take the foods home. This time was actually pretty good salmon with carrot rice pilaf, crostini with artichoke spread, broccoli and dinner rolls.
...not bad at all!

Butter fish n Chicken Fish

 We baked this fish with butter and wrapped in foil.
 These filets were cooked in a pan with the chicken's leftover marinade/drippings.
 Pretty display of chopped cherry tomatoes for our salad tonight.
 Mmmmm, dinner... the butter fish was good, but a bit plain (next time, i'll add lemon garlic powder for more flavor). The chicken fish is called chicken fish because it tastes like chicken too. :D And a tomato salad is always good for you. 
We had a light airy lemon pie, baked by a good family friend, Aunty Kay. It was quite satisfying and goes great with cool whip!

Marinated Chicken

Bf always likes to try variations of making chicken taste delicious. This time around he did a marinade. It was good, but I still favor the brined chicken. Overall, this meal was still yumsters!

NESTLÉ TOLLHOUSE Chocolate Chip Cookies

The only thing I changed was that I used 2 and 3/4 cups of flour and I used 1.5 cups chocolate chips and chopped nuts, each.

Teeny Chicken Thighs

This meal was quite delicious! Here, we have chicken thighs that were cooked more than needed and therefore shrunk quite a bit. These thighs were roasted in a cast iron pan this time, which cooked the meat much faster than anticipated. Thankfully, they were still delicious and juicy. I heart chicken thighs and drumsticks the most! I made the potato pancakes, which were taught to me by my awesome friend, Jo. And we've got a small portion of canned corn for veggies with a shotglass of hot sauce for a nice spicy kick. This was goooooooooooooooood!

Chicken n Eggplants

This looks AMAZING! Doesn't it?
Brined chicken with potato hash (which is just shredded potatoes that were stir-fried with salt and pepper and a little bit of oil) and sliced eggplant. Sadly, this was a salty meal as everything was a bit oversalted. Note to the wise: Taste your food as you cook! (maybe not the chicken, but the salted potatoes and eggplants could've been prevented). I need to make this again..... as I'm sure it'd taste as fantastic as it looks.

Boring Burger

We had some ground beef left and no creative ideas for it, so we made burgers. It was a pretty boring dinner tonight... even the picture looks boring if you ask me. At least it still tastes pretty good... although, not as great as it would've been if we'd use fresh ground beef.....

Tacos, again...

Tacos are so easy to make! We always have tortillas, cheese, meat, and canned tomatoes. We happened to have salsa verde and sour cream to make this more tasty! Yay!

Mexican Night?

Not really... we just threw some stuff together. We have quesadillas made with corn tortilla and shredded cheddar cheese with a dollop of sour cream. We have a "chili mixture" made with ground beef, white onions, black beans, salt and pepper, and lots of chili pepper. Then there's a green salad with jalapeno ranch dressing and a small dish of salsa verde to make everything taste better. nom nom nom

Egg salad Sandwich

This is one of the few dishes my pops knows how to make.
For three sandwiches, my pops diced five eggs (or you could dice 2 eggs per person) and added a couple spoonfuls of relish and a heaping tablespoon of mayo. Mix. Should look like the below. 


Viola! (You could add a slice of cheese too, but we ran out). It was yummy in my tummy!

Pork Bourguignon

See the Boeuf Bourguignon for the process. Instead of beef, pork was used this time. 


We added the pork bourguignon with pasta. It was very delicious. But in all honesty, I think the original beef was slightly better. Or maybe if the pork was in smaller chunks, it would pick up more of the flavor.
