No bake Banana Creme Pie

Okay, the only thing I baked was the crust.... but the filling was instant french vanilla pudding mixed with mini banana slices and topped with a lot of whipped cream. My bubby ate half of it in a day.... I think he liked it!

Simple Salmon in White Sauce

This was mm-mmmm SO dee-licious!

It's fresh salmon (NOT frozen) placed in a pan with heavy cream. Lightly salted and peppered with some dried dill and capers on top. Cook til just done. Super yummy!

Ps: if you use half n half, the cream'll break up into lumps. If you have Parmesan cheese, you should add it to the cream and melt it first before placing the salmon. It should help with the sauce lumping.... I think....

Hoagies!

Bread smothered in mayo and black pepper.

Hoagie insides are made with sliced chuck beef, sliced onions, sliced tomatoes, and green onions. Seasoned with salt and pepper.

Hoagies topped with cheese. mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm.
Super yumsters although the beef was a bit tough. Next time, we'll have to slice up the meat to strips.

Complete with grapefruit strawberry lemonade martini. :D All smiles here!

Salmon Skin and Soba

Salmon skin coated lightly with potato starch and deep fried and salted.... the concept sounded like it would be tasty, but it turned out to be pretty oily... If there's a next time, I think we'd try just pan-frying it.

Eating the salmon skin with soba noodles balanced out the greasiness though so overall, it was a pretty tasty meal.

Spare ribs w/ Steamed veggies

 1. Take a big slab of spare ribs and generously coat it with bbq seasoning.
 2. Place in foil and seal the sides. Leave an opening on one side to pour in sauce, then seal up tightly.

3. Pour in some sauce (3tbs worcestershire sauce, 3tbs apple cider vinegar, a can of beer, and 2tbs amaretto syrup)
 4. Bake in the oven at 250 degrees F for 3-4hrs for maximum juiciness.
 5. Take out of foil pocket and add on a glaze. (Hubby makes the glaze from the juice leftover and reduces it somehow...
 6. Broil just enough til nicely browned, like below.

7. Slice up the ribs. Plate. And enjoy!

We enjoyed our spare rib with a lemontini. Super scrumptious!!!

Apple martini mixed with clear rum and a maraschino cherry. Yum!

(Left picture) Pork belly on top with sliced pork on the left and sliced beef on the right.
(Right picture) Diced cabbage with long stemmed mushrooms, tofu, and fish balls.

So GOOD!!! Was really missing asian food. :)

Beef Dumplings

Beef Dumplings - two ways
The dumplings are made with ground beef, minced garlic, cabbage, salt and pepper, and sliced mushrooms. I probably should have added an egg to bind all the ingredients together since the ones on the left, I cooked them in boiling water for about 5-7 minutes, the ground beef was falling apart. It also wasn't that great. Pork dumplings are so much better in my opinion. The ones on the right were steamed and then panfried. Same way as the pork dumplings.

Fried pickles and spare ribs

My fiance made fried pickle. The item next to the cup of ketchup is actually fried cheese. Both were pretty tasty. The pickles were a bit salty. If only the batter/crumbs stuck better, it would've helped with the saltiness. However, the cruch was totally there and just yumsters!

Spare ribs with steamed frozen vegetable, well, more like microwaved.....

Homemade Pork Dumplings

This is 1.5lbs of ground pork, 3tsp kosher salt, some freshly ground pepper, about a 1 tbs of zested ginger (could've used more, didn't really taste the ginger this time), about 4-5 cups of shredded cabbage, 3-4 mushrooms-sliced, and about 1.5 tbs of sesame oil.

shredded cabbage

dumpling wrapper, sesame oil and ginger

brown mushrooms

fully wrapped dumplings

best when pan-fried.
To pan fry, pour about a tbs of oil onto a heated frying non-stick pan. place dumplings so they are not touching each other. pour about 1/2 a cup of water into the pan. cover. let cook for about 5-7 minutes over medium heat. if water hasn't boiled completely, let boil uncovered. once the bottom has browned, flip it over and brown other side.

Then eat your deliciousness! :D

No Mess No Fuss Pork

Get some pork pieces, put on foil. Add spices and salt and any other seasonings along with chopped tomatoes for color. Wrap up tightly and place in a cast iron, then place in oven. Bake at 350 degrees for 1-2 hours or until cooked. This was okay. I wouldn't recommend trying it out though. Twas one of the blander-tasting foodie...

Tomato n Beef Casserole w/ Baked Potato

The last of the tomato and beef casserole with a scrumptious baked potato topped with sour cream, cheddar cheese and a sprinkling of chopped green onion along with a couple of slices of tomatoes. I'd say the baked potato was the best part. Haven't had that in awhile! Mm-mmmmm

PS: To make the baked potatoes, simply wash'em well, dry them, coat with light layer of olive oil (or any veggie oil) and sprinkle with kosher salt. I wrap them individually in foil and bake them in the oven at 350 for about 30-40 minutes. (Some people don't wrap them though.) I check to see if they are done by poking it with a knife on top. If it punctures easily, it's done. If you have trouble, the potatoes aren't done yet.

Here we started off with just three bananas...

And we finished plating with 5 whole bananas, a crap ton of Neapolitan ice cream, whip cream, maraschino cherries, various colored sprinkles and kookie krisp cereal.

Needless to say it was freakin' fantastic :D

Tomato n Beef Casserole w/ Mash Potatoes

This is pretty good but I prefer the Tamale Pie with the cornmeal crust on top instead of the bottom. If you are interested in the recipe, go here.

Tomato and Beef Casserole

I was getting sick of everything we were eating and wanted to try something different. Sadly, this turned out to NOT be different from what we've been eating lately. Major sigh!!! Luckily, my fiancee was feeling the same as I and we decided to go out to eat. hehe. We went to King Buffet and gorged on salmon sashimi and sushi. Mm-mmm good!
