Peanut butter Noodles w/ Chicken

We haven't had peanut butter noodles in ages! To make the peanut butter sauce, mix 1 cup peanut butter, 3/4 tablespoon soy sauce with 1/4 tbs water, 2-3 dashes of Frank's hot sauce, 2 tbs brown sugar, a squeeze of lemon juice and 3/4 cup of hot water. If your consistency is too thick, add more hot water. If your consistency is too thin, add more peanut butter. You can add more hot sauce if you like your dishes spicy. Serve with chicken and peas! Yummy!

Potatoes n Chicken

I know it looks like the star of this entree is the chicken thighs, but it's really the baby potatoes. Why, you wonder? It's because those came from my backyard!!!! Euge, a friend of mine had given me a bag of potatoes that were already sprouting like crazy. So I dug a hole and threw them in my backyard and there they grew to a decent baby sized potatoes! They were soooooo delicious!!!! and the texture was just amazingly soft, not grainy or mushy. Simply put, it was perfect. The only thing wrong with the potatoes was that I didn't have enough for seconds. So sad. The red stuff is hot sauce for the chicken. Served with broccoli as greens.

No Salad, Day 5

Just wanted to give an update that we are NOT going green. My hubby turned carnivorous and we ended up eating at Road to Seoul. Yay for meats again! and all the delicious stuff served at Road to Seoul such as their beef tongue and kimchi pancakes! Sorry, no pictures. If you click on Road to Seoul, it'll lead you to yelp and they have tons of pics.

Also, just a side note. Today is my last day at Cedars. Woot!

Salad, Day 4

For Thursday, our leafy greens were infused with leftover canned tomatoes, shredded carrots, canned corn, candied walnuts and sliced avocados. So far, we've had a pretty healthy week of green dinners. Dare I say we're going green? I don't even eat my salads with dressings because it's simply not needed. Although, for a really good balsamic dressing. I mix a 1 to 3/4 ratio of olive oil and balsamic vinegar, respectively, and add crushed sea salt and pepper. I actually used this dressing on yesterday's salad. Pretty yumsters!

Salad, Day 3

For Wednesday night, we had leafy greens with canned tomatoes, chopped boiled eggs, shredded carrots, whole olives, sliced avocados, candied walnuts (my hubby's creative idea) and cubed cheese on the side (i favor sharp cheddar). To make the candied walnuts, all you do is get chopped walnuts, place in frying pan with a lil bit of oil. Then, heat them up for a few seconds and add drizzle honey over them. Stir the walnuts til evenly coated. Than, nom nom nom away!

Second day of salads - we have green leaf lettuce with chopped cucumbers, carrots, boiled eggs, olives topped with a cubed sharp cheddar cheese. (there were more cheese cubes on the side) Pretty yumsters too!

Salad, Day 1

This week (not including weekends), we will attempt to have all salads and no meats... For Monday, we're eating red leaf lettuce with canned fire roasted tomatoes, sliced cucumbers and olives. Salads always taste so much better with other things in them besides just lettuce.

Various Quesadillas

If you can't already tell, this family eats a shizton of cheese! We <3 our quesadillas!!!
 Ground turkey with sliced orange bell peppers, shredded mozzarella and sliced tomatoes.
 Ground turkey with sliced orange bell peppers, shredded mozzarella, canned tomatoes, sliced cucumbers. Cucumbers make this quesadilla delicious with a bit of crunch and cool summery feel.
Serve with chips on the side for a tasty lunch!

Veggie night

 Salad made with red leaf lettuce, chopped cucumbers, chopped tomatoes, canned corn, and chopped green onions
 Mozzarella and green onion quesadilla via the wafflemaker. (side note: my innovative bf thought this up).
 Salad with a half boiled egg and quesadilla topped with sour cream and salsa verde. Can't ask for anything better, even if this is vegetarian!
 Birthday cake for my birthday bf!! It's chocolate cake with vanilla ice cream. No, this is not homemade. We bought this from baskin robbins.
Adds yumminess to a whole 'nother level! Delicious ending to the salad and quesadilla!

Turkey Lasagna, Day1

Sauce made by sauteing about 1.5lbs of ground turkey first and seasoned with taco seasoning, powdered cumin and chili pepper. Then add a jar and a half of prego sauce. Stir. Then add a bit of chopped orange bell peppers. (any bell peppers would do). I just added the bell peppers because I grew them in my backyard. :)
Have your lasagna noodles already cooked. The first thing you want to do is add a little bit of prego sauce then add your noodles for the first layer. Then layer the turkey sauce.
 Then add the cottage cheese.
Then add the mozzarella cheese. Continue with layers.
I had three full layers and then topped with a fourth layer of noodles and covered that with lots of shredded mozzarella cheese.
Eat with hawaiian bread and greens. Soooooooo delicious!!!!

We had a few chuck steaks left so we chopped it to pieces and topped our romaine salad with it and a bit of shredded mozzarella and sliced roma tomatoes. Yummy!

Quesadilla via the Waffle maker

Heat up the waffle maker. Then place a flour tortilla on the waffle maker. Add cheese and other stuffings you want in your quesadilla on one half. Here we have cooked and breaded fish with peas and chunks of mozzarella string cheese. Fold over.
 Let it heat up til cheese melts and the tortilla is nicely browned.
Serve with a side of tomatoes, salsa verde and sour cream. Eat your heart out! :D

Scrambled Fish




Or fish hash. Surprisingly, this tasted pretty good. To be honest, we screwed up on the fish. At first it was going to be a garlic lemon and pepper fish dish, but then it turned out too lemony because we added waaaaaaaaaaaay too much lemon zest and it was just sour and a bit bitter. Neither salt nor sugar did anything to alleviate problem. So, we actually rinsed off our fish and tried again, this time breaking it apart, adding more white wine, more minced garlic, some oil, some red robin's seasoning, parsley, seasoned bread crumbs and peas. And voila! Serve with brown rice, tartar sauce and diced tomatoes.

Salmon Burgers

 Frozen patties from costco.
 Toasted buns
Layers starting from the bottom: Toasted bun, jalapeno ranch dressing, lettuce, american cheese, salmon patty, sunny side up eggs (cooked so not runny), tartar sauce from last night's left overs, and the toasted sesame bun. Serve with chips on the side. Om nom nom nom nom.... so yummy!

Breaded Fish

I can't stop raving about these fish!!!

Omgosh! These were the BEST fish I ever made in my entire lifetime!!!! I only hope I can replicate this for future eats. These are two basa fillets that were defrosted overnight. I patted them down with paper towel to dry them up just a little bit so it's not dripping wet, but still a little moist. I placed them in a flat bowl (to contain my mess as best as possible) and poured about 1/3cup of all-purpose flour and covered both sides of the fish. Then I scrambled one egg in a small bowl and poured it over the fish and again made sure to cover the entire filets with the scrambled egg. Then I took bread crumbs and covered the entire filets as well. I lightly sprinkled red robin's seasoning on them. Fire up a pan, add a little oil and place those babies in. I left them on medium heat for 5 minutes, then flipped. Then I added 1/3 cup of water and covered and let cook for about 1-2 minutes or until water evaporates. After that, I let it cook for another 3-4 minutes. The inside of the fish were very moist and succulent, while the outside was crunchy and tasty. It was very DEEEEEEEE-licious!!!! Serve with rice and salad for a more complete meal. :)
