Short ribs

Cabbage n tofu with salt n pepper to taste. I prefer to season with fish sauce but my hubby does not, hence the salt n pepper....

Served with leftover beef patties and some short ribs. (keto-friendly)

This was for me n pops. Short ribs are delicious with rice. Mm-mmmm!

For the pops and I.

For the hubbster... sour cream instead of rice, and a crap ton more of cheeeeeeeeeeese.

The day, we had cabbage instead of broc.

Salmon!

Fresh Salmon! Cook skin side first until crispy.

Sear side #2

Sear last side #4 

Poured in some 2 buck chuck white wine

Poured in some heavy whipping cream and mix with wine.

Add in a spoonful of capers.

Cover and cook a little more. 
(we winged this so we don't have an exact timeframe.)

Ta-da! 
Deliciously tasting salmon in a creamy white sauce. It was sooooooooo awesome! We <3 p="" salmon.="">

Coconut bread toasts

This coconut bread was made without the splenda per hubster's request. For breakfast, he toasted a couple slices, placed a dab of unsalted butter and gave it a pinch or so of kosher salt. It was pretty yummy for a simple breakfast. Mm-mmm!

Good Stuff

Tonight we had spinach (finally found some that weren't too covered in dirt), leftover ground beef n broc and scrambled eggs and rice.

To make it keto-friendly, he had pork belly, sunny side up eggs, both of which were covered in his beloved chipotle sauce and spinach covered in cheddar cheese.

Lemon Pepper Basa Fillets


Basically, I just lightly covered the basa fillets in lemon pepper salt and then pan-fried. We haven't had white fish in a while so it was another great meal.

Beef n Broccoli Patties

Literally: ground beef and broccoli (broccoli went into the food processor) patties
with rice! (for pops)
with pepperoni and cheese on top of the pattie (for me)
with chipotle sauce and no rice (for hubby) :D

Pork ribs n Stuff

Dinner for 2/14/2013:
Pork ribs topped with bacon, broccoli, pineapple, and rice for me and my pops.

Keto-friendly: pork ribs topped with chipotle sauce and frank's hot sauce, a dollop of sour cream, broccoli with melted cheese and a couple of bacon slices for the hubby.

Dinner for 2/15/2013:
Rice, cabbage and tofu cooked in the pork rib juice we drained and kept, pork ribs and pineapple for me and my pops.

Keto friendly: Pork ribs covered in chipotle sauce, couple slices of pork belly with a bit of chili paste, and tofu n cabbage and a dollop of sour cream for the hubby.

Another yummy meal, another full and satisfied tummy.

Kale Chips

For Valentine's day, I present to you with........ Kale Chips!

One bunch kale leaves, rinsed and spin dried - stems removed

Kale chip seasoning:
3 tbs olive oil, 2 tbs lemon juice, 2 tsp onion powder, 1/2 tsp sea salt, 1 tsp garlic powder, 1/4 tsp black pepper, 2 huge tbs chopped dill ( I used 1 tbs dried dill weed)

I put on gloves and rubbed the seasoning on each kale leaf.

Before pictures:
Bake in preheated oven of 250F for 40 minutes. 

After pictures:
They shrank a lot! Most chips were amazingly delicious and quite crisp, but there were a few chips that were a bit sour because of the lemon. If I ever make this again, I might cut down on the lemon juice to 1 tbs instead. While it is a bit of work rubbing down each leaf with the seasoning, it sure is tasty! Also, it was really really slightly burnt so should aim to bake it for 35-37 minutes instead of a full 40.

Pork ribs n Cauliflower mash

Pork ribs covered generously in lemon pepper salt. Then, before baking, drenched in blue moon til almost covered in liquid. It was then covered in foil and baked for 5 long hours in a preheated oven of 475F.

End result is fall off the bones pork ribs. 
We drained the juice and saved it for future stuff...

Pork ribs with cauliflower mash and frank's hot sauce. (I ended up not using the sauce since the ribs were delicious as is). nom nom nom

Devilled eggs, Steak n Cauliflower

Appetizers: devilled eggs homemade by my soon-to-be hubby! Super delicious! He boiled the eggs, peeled the eggs, dug out the yolks and placed them in a bowl. He mashed the yolks and mixed in mayo, sour cream, and a bit of mustard. He seasoned the yolk mash with salt, pepper, paprika and I think something else but I can't remember what... anyhoo, it was super yummy. Even pops had something to say about it.
More steak for dinner. Ain't that purty?

Sliced steaks, another devilled egg and cauliflower mash. Mm-mmm!
