Something Different

We've always made rice in a rice cooker. But this one time, I decided to try something different. I added curry powder! It was interesting. I added too much water so I decided to pan fry it a bit and added chopped shitake mushrooms. It was definitely something I would totally make again. Yummy!

This dish is ground pork with tofu and baby corn. Something my mom used to make and definitely one of my favorite dish.

Dinner! The sliced zucchinis were slightly sauteed with olive oil, salt and pepper.

Pineapple Butter / Pineapple Sauce

So, after making persimmon butter and pear butter successfully, le hubby had the amazing idea of taking any fruit and turning it into "butter." In the grocery store, he pointed out to plums, blueberries, then pineapples. I said no to the plums and blueberries because the butter would be more like a sauce or a jam. But, when he pointed out the pineapples, I said, "Hrm, sure. That just could work." So we grabbed a couple of pineapples and when we went home, I looked up a recipe. I used this one as a guideline: Pineapple Butter with Cardamom and Vanilla.
Ingredients that I used: 2 lbs freshly chopped pineapples, 2 cups chopped pears, 3 tbs lemon juice, 2 tsp vanilla extract, 1/2 tsp ground nutmeg, 1/2 tsp cinnamon, 1 cup water, and 2 tbs brown sugar (not shown).

Place all ingredients into a pot and cook until the fruits are soft.

All soft!

Took a hand blender and pureed it. It's pineapple-sauce!!

Cook a little longer....

Looks pretty thick. Pretty sure it's pineapple butter! :)

And canned! Twas mm-mmmm goood! And the taste is very exotic and tropical-like! Totally reminds me of hawaii.

KBBQ at home!

Instead of hot pot day, we tried to do our own makeshift homemade korean bbq via cast iron over portable gas station. For side dishes, we have spicy daikon and spicy cucumber (store bought), sliced mushrooms, baby squids (the white stuff on the plate), chopped lettuce for salad but without the amazing sauce that usually accompanies it at restaurants and lots o sliced meats. Mmm-mmmmm.

Pancakes

Le hubby and I were craving pancakes since we don't make it all that often. A simple search and I found two recipes I wanted to try. The first pic was a recipe for tall and fluffy pancakes and the second pic was for a delicious old fashioned pancakes.
These pancakes were visually appealing and tasted quite yummy. It was definitely very fluffy and airy but fulfilling! Hubby topped his pancakes (or rather I topped his pancakes) with strawberry jam, sliced bananas and frozen blueberries. I should mention though, we did get a slight stomach ache a few hours later and I think it had to do with the milk and vinegar combo.... Maybe I'll try lemon juice instead of the vinegar?...

Another delicious tasting pancakes with no tummy aches later. Can't go wrong with such a simple recipe. I also believe it's the same ingredients in Chef John's recipe. This time I added blueberries IN the pancake batter. I'm pretty sure blueberry pancakes are my fav! This one is topped with sliced bananas, whipped cream, walnuts and a sprinkle of cinnamon. Mm-mmm yummy!!

Fried fish

It's Not Quite Italian Dinner Night

We fried frozen fries, made spaghetti with angel hair and canned prego, warmed up frozen peas, heated up the last of the coconut biscuits, and steamed, then breaded, and fried up some chicken wings. All served with the last of the Angel Food Cake. Needless to say, dinner was devoured in a snap... esp the fries.
We made an entire bowlful and it was gone within minutes.

One of Our Saturday Breakfast...

Breakfast was delicious with leftover Domino's Pan Pizza, toffee chocolate pretzel bark, and a bottle of almond and orange flavored champagne. :D March is looking good already.
