Chicken Burrito

Making a chicken burrito is pretty self explanatory:
1. Heat up a tortilla. Place rice and shredded chicken.
2. Add lettuce and tomatoes.
3. Add cheese and sour cream.
4. Roll it up and let it heat until the flour tortilla is nice n crispy.
5. Eat! (I had curry ketchup on the side for a dip.)

Peanut butter Noodles w/ Chicken

We haven't had peanut butter noodles in ages! To make the peanut butter sauce, mix 1 cup peanut butter, 3/4 tablespoon soy sauce with 1/4 tbs water, 2-3 dashes of Frank's hot sauce, 2 tbs brown sugar, a squeeze of lemon juice and 3/4 cup of hot water. If your consistency is too thick, add more hot water. If your consistency is too thin, add more peanut butter. You can add more hot sauce if you like your dishes spicy. Serve with chicken and peas! Yummy!

It's not the tv show. It's merely more of the deliciously brined overnight oh-so-juicy tender mouthwatering chicken thighs with green peas and brown rice. nom nom nom ....  YUM!

Teeny Chicken Thighs

This meal was quite delicious! Here, we have chicken thighs that were cooked more than needed and therefore shrunk quite a bit. These thighs were roasted in a cast iron pan this time, which cooked the meat much faster than anticipated. Thankfully, they were still delicious and juicy. I heart chicken thighs and drumsticks the most! I made the potato pancakes, which were taught to me by my awesome friend, Jo. And we've got a small portion of canned corn for veggies with a shotglass of hot sauce for a nice spicy kick. This was goooooooooooooooood!
