Fry Day!

Let me start off by saying it's FRY-day!! Le hubby wanted to fry up shrimps, chicken wings, onions (blooming onion style), cheese sticks, mushrooms and anything else we could thing of. I can tell you we did end up frying everything but the mushrooms only because we ended up have WAAAAAAY too much foods.
To make the batter, we used something along the lines of 1 1/2 cups flour, 1 tsp salt, 1/2 tsp pepper, 1 tsp cajun seasoning and a bottle of beer.

Came out glueish looking. haha
Bought these shrimps from pavils. I believe they were only deveined and we just left the shells on.
They were rinsed, patted dry, and then coated in cornstarch.
Then, I got the brilliant idea of adding panko to the batter. Added about 1 1/2 cups of panko.
Deep fried the shrimps after a dunk in the panko batter.
Squeezed some lemon juice on top. Twas delicious!
Our attempt at a bloomin onion. Learned how to cut one here.
Ended up quartering it because it was too big to fit in our small fryer. We coated the onion in cornstarch before dunking it in our panko batter.
Fried shrimps and onion with fancy ketchup on the side. It's fancy cuz hubby added some spices to it. Also, as you can see, the bloomin onion didn't turn out too well.
Lunch time! We could barely finish it.

PS: we fried up the chicken wings and cheese sticks for dinner. The cheese sticks didn't turn out too well as we decided to try frying that last minute when the cheese part really should have been frozen beforehand.

Turkey Sandwich

For a truly delicious turkey sandwich, toast your bread. Slather both toasts in mayo and sprinkle with fresh ground black pepper. Place some iceberg lettuce, then turkey, then a couple slices of tomatoes followed by course ground mustard and then a slice of american cheese. Top with other toast and enjoy! If you don't get full easily, add an egg in there! Mm-mmmm!!!!

Pasta Casserole

I got tired of making baked goods because I found I had nothing substantial to eat when lunch time came. So I made an easy peasy pasta casserole.

I used 6oz uncooked pasta (not shown), 1/2 cup ricotta, 2 oz pepperoni, 3oz baby spinach, 8 oz spaghetti sauce (not shown) and 4 oz Monterrey jack cheese.

1. Cook the pasta according to directions. In the meantime, roughly chop up the spinach and pepperoni.
2. Once the pasta is cooked, place in a 6 cups casserole dish. Mix in the ricotta cheese, then pepperoni, then spinach and then the spaghetti sauce.

3. Then top with Monterrey jack cheese. (Shredded works fine too, but I didn't feel like washing an entire food processor for only 4 oz of cheese.)

4. Pop it in the a preheated oven of 350°F for 20 minutes.

It was pretty yummy and super quick to make. I love how the pasta holds onto the other foods making every bite delicious! I would add more sauce and cheese next time because I love my pasta drenched in sauce and cheese.

DIY Faux Corn Dogs

First, cook your hot dogs. A pat of butter always makes everything tastier.

While the dogs are cooking, prep your sliced bread (we used wheat) with a slice of American cheese.

When the dogs are cooked to perfection, place one on your prepped bread and roll. The hot dog should melt the cheese and allow the bread to stay into a roll.

Place back into the pan and toast all sides. Add another pat of butter if needed.

It should look like the above. It reminded me of a corn dog but with a wheaty taste and no stick. It had a crunch on the outside and was nice and soft on the inside, just like a corn dog.

Serve with a side of salad.

Don't forget your condiments! Twas delicious =)

Macaroni Salad

A couple of weeks ago, my dad asked for macaroni salad. I said sure... when I get the ingredients. I finally have them all. It's quite easy to make, just takes a bit of time. Here's what you need:

3 cups uncooked pasta (this time I used mini penne as I tend to change it up)
2 big roma tomatoes (~1 cup)
3 carrot sticks (~ 1 cup)
2 celery stems (~ 1 cup)
1 cup frozen peas
3 boiled eggs (~ 1 cup)
1 can of spam
1/2 cup mayo
salt n pepper to taste

1. Boil the pasta first before you chop anything!! That way the pasta will have time to cool off.
2. Then chop up everything!! (If you haven't any boiled eggs, boil them second, then chop everything).
3. Just mix in all your chopped foodies into your pasta, including the spam.
4. Add in the mayo and mix well. You could always add more if you are a mayo lover. I tend to add only a little bit of mayo and then when I serve it, I either mix in more mayo (cuz it looks like it dried out) and/or some ranch or blue cheese dressing for added flavor.
Om nom nom.... I added another dollop of mayo and some black pepper for tasty. Mmmm

Handy to have these:

Salmon Sashimi

One of the things my hubby got me hooked on when we first met was salmon sashimi. That's right~ before I met him I was an everything well-cooked kinda gal. But man oh man, sushi and sashimi can be pretty expensive. Then we found a cheapER yet still satisfying and delicious way of fulfilling our salmon sashimi needs. Buy a regular ole salmon fillet and just make sure it's as fresh as possible... in other words, it doesn't look old.
Here's a picture of our fillet of salmon that I just had to have to fill a craving. :o)

First you need to skin it then place it in a deep dish.

Then add rice wine to cover the fish and let it soak for a good 3-5 minutes.

Dad's munchie portion... he doesn't eat that much raw meats...

My hubby's and my lunch portion. Served with soy sauce and wasabi. It was oh-so-yummy!!! And no terrible consequences afterwards if you know what I mean. Although, if it'll ease your conscience, you could always drink some kind of alcohol with this meal.
om nom nom nom :D

Handy to have something similar to this to slice your fish:

Superbowl Sunday Foodies

Prep the steaks by rinsing briefly under cold water and then pat dry. Then cover all sides with lemon pepper seasoning. Cover with saranwrap and refrigerate until ready to eat.

Made some cornbread from scratch with cornmeal flour.

Prep the wings for late lunch munch: half with lemon pepper, remaining half with kosher salt. Bake in preheated oven of 475F for about 45 minutes or until done.

Washed some very red strawberries. Sa-weeet!

Fried up a bit more salmon bellies and deliciously eaten with sour cream.

Hot wings are baked to perfection with a nice golden brown skin.

Hot sauce warmed up and mixed with butter. Mmmmmmm.

For the wings with only kosher salt, place'em in the hot sauce.

Lemon pepper wings on the left and regular wings on the right with more hot sauce in the sauce cup.

Kettle Chips!!
Steaks were seared in hot cast iron for about 60 seconds on each side then placed into preheated oven for about 8 minutes, flipping after 4 minutes or something like that... the fiance took care of this.....

Super scrumptious dinner with sliced steak, cauliflower n cheese mash and cornbread. Soooooooooo delicious in my tummy!!!
