Eggplant Fried Shrimp Rice w/ Watercress Soup

Here we have lightly browned onions, sauted chopped eggplants, chopped fried shrimps (in a food processor) and scrambled eggs. Add all of these with brown rice and a bit of canola oil...

...and you've got eggplant fried shrimp rice! There's watercress soup on the side. Just note that you should use fresh watercress otherwise the soup will be bitter.
