Turkey Fried Rice

Soooooooooooooo, I made turkey fried rice bc we had left over ground turkey sitting in the fridge. Now, normally, I'd just throw things together without measuring or a recipe, however, just once, I thought I'd try out a recipe Turkey Fried Rice and see how it turns out.

In place of peas and snow peas, I used fresh homegrown green beans we received from the Portingas. They are gorgeous, aren't they??? I used 1.5 cups of these fresh green beans and boiled them in water for 10 minutes.

Meanwhile, I cooked up 1lb ground turkey with 1tsp Penzeys' Pork Chop seasoning, which included garlic and ginger. Then, I cooked half a white onion (in place of the scallions) until it was nicely browned.

1 cup sliced carrots and 1.5 cups boiled green beans

Then back into the pan for the ground turkey, onion, green beans, carrots and rice. I actually used less rice than was called for bc I don't like an excessive amount of rice in my fried rice. Once everything was mixed together, I added the 2 tbs hoison sauce and 2 tbs rice wine (no rice vinegar in this house).

At the end, I decided to add eggs bc for us, fried rice ain't fried rice without scrambled eggs. In fact, that's the best part!!!! So, being lazy, I just pushed everything aside and scrambled up three eggs in the space shown. heh.

And voila, turkey fried rice. It's not my fav but it was good enough. I still think the best fried rice is made with spam, eggs, peas n onions.

Meatloaf

I've been meaning to make meatloaf for pops since he asked for it awhile ago. And since we have a lot of leftover meats, I figured I ought to just make it. We had leftover ground beef and old costco meatballs (though I'm sure it'd never go bad while it's in the freezer... heh) and a new ground turkey package that's been sitting in the freezer for a while now and I just bought bacon..... so here's what I used for my meatloaf:

9 oz ground beef, 10 oz costco meatballs (or 16 meatballs), 15 oz ground turkey, 2 celery stalks, minced, 1/2 large white onion, minced, 1/2 oz sun dried tomatoes, minced, 4 oz bread crumbs, 1 tsp kosher salt, 1 tsp chili powder, 3 tsp garlic powder, 1/2 tsp black pepper, 1/2 tsp cumin powder, 1/4 tsp curry powder and 1 egg. I forgot about the bacon :(

Sauce: 1 3/4 cup ketchup, 1 1/2 tsp cumin powder, 2 dashes Worcestershire sauce, 1 tbs sugar

Pretty much just mix them all in a mixer and then add the egg last. Then place it in a meatloaf pan that's been sprayed with PAM. Then flip it on a cookie sheet lined with parchment paper and bake in a preheated oven of 350°F for 1 hr and 15 minutes or until it reaches an internal temperature of 155°F.

The sauce mixture is applied to the meatloaf once it's been baking for 15 minutes. I use about half the sauce mixture and save the rest for when it's served. It's super delicious!

Ground Turkey and Sausage Fried Rice

Scrambled eggs, the last of the turkey sausage onion combo, chopped green onions.

Mixed with chopped broccoli and brown rice and a bit of soy sauce and black pepper.

Ta-da! A mountain of palatable savory fried rice. Mm-mmm gooooooooooooood!

Burrito Plate


Pretty much whatever you put in a burrito goes into the burrito plate. It's a plate because if we made bowls out of our tortillas it'd be pretty small. That and it was easier to brown the tortillas to act more like a plate. We made more ground turkey and sausage meat with chopped onions and seasoned with lawry's salt. We ended up eating it as if it was a taco though.... and it was a very messy but deliciously savory burrito plate.

Turkey Sausage Quesadillas



These quesadillas were once again made in a waffle-maker. It's kind of slow if you need to feed a family of 3 or more though. Nevertheless, it's quite delicious. Bf cooked and seasoned ground turkey with ground sausage together along with some chopped onions. Place rice, beans, corns, lettuce, cheese, ground turkey n sausage etc for your meaty-licious quesadillas!

Turkey Lasagna, Day1

Sauce made by sauteing about 1.5lbs of ground turkey first and seasoned with taco seasoning, powdered cumin and chili pepper. Then add a jar and a half of prego sauce. Stir. Then add a bit of chopped orange bell peppers. (any bell peppers would do). I just added the bell peppers because I grew them in my backyard. :)
Have your lasagna noodles already cooked. The first thing you want to do is add a little bit of prego sauce then add your noodles for the first layer. Then layer the turkey sauce.
 Then add the cottage cheese.
Then add the mozzarella cheese. Continue with layers.
I had three full layers and then topped with a fourth layer of noodles and covered that with lots of shredded mozzarella cheese.
Eat with hawaiian bread and greens. Soooooooo delicious!!!!
