For dinner, we had rice, shredded chicken (costco rotisserie), guacamole and leftover poutines from Biergarten. This was one super duper great tasting meal!
The hubster and I just got married in April 2013 and are kinda settling down again. We used this blog to see what we've been eating over the years, but now we'll use it to post new recipes we're trying/testing/perfecting. Monster burrito
The first layer on a burrito is cheese and LOTS of it! The second layer is shown above and is made with leftover rice, julienne chuck beef, chopped onions and seasoned with salt and pepper.
The third layer is a tomato guacamole.
Roll it all up in a 10-12 inch tortilla and you've got something super duper tasty to chomp on for dinner!

24hrs chili
all the above plus about 2lbs of ground beef
plus a bit of colorful veggies
(bell peppers from the backyard :D)
All the above placed in a slow cooker and cooked alllllllll day and night.
for a yummy taste of chili over toast topped with mozzarella cheese and guac.
Mmmmmm, such tasty goodness in my tummy!

Mango Guacamole
This guacamole is has a light sweetness to its creamy goodness. It's super flavorful! Just mash up 3 decent sized avocados and mix with the juice of 1 lime, 1 chopped roma tomato, 1/3 chopped brown onion, 1 chopped mango, about a 1/4tsp chili pepper, 1/8 tsp cumin powder, 1/8 tsp black pepper, and 1/8 tsp and a generous pinch of salt. Mix well and enjoy!
