24hrs chili

all the above plus about 2lbs of ground beef

plus a bit of colorful veggies 
(bell peppers from the backyard :D)

All the above placed in a slow cooker and cooked alllllllll day and night.
for a yummy taste of chili over toast topped with mozzarella cheese and guac.
Mmmmmm, such tasty goodness in my tummy!

Mango Guacamole

This guacamole is has a light sweetness to its creamy goodness. It's super flavorful! Just mash up 3 decent sized avocados and mix with the juice of 1 lime, 1 chopped roma tomato, 1/3 chopped brown onion, 1 chopped mango, about a 1/4tsp chili pepper, 1/8 tsp cumin powder, 1/8 tsp black pepper, and 1/8 tsp and a generous pinch of salt. Mix well and enjoy!

Bacon n Cornmeal Waffles



Dry ingredients: 1.25cups all purpose flour, 0.75cup of yellow cornmeal, 2tbs sugar, 1tbs baking powder, 0.5tsp of kosher salt
Add an egg, 6tbs veggie oil and 1.75cups of milk to the dry ingredients. 

Place in waffle maker:
YUMMAY!!!!!! Cornmeal waffle is a tad bit better than regular waffles because it's lighter and has got more of a crunch. Super delish when you add bacon into the mix as well! :D

Guacamole

The last time we had guacamole was at my friend's bbq on the fourth of july. Ever since, me and the hubby has been wanting more! To make this creamy goodness, we used about 3 decent sized avocados, chopped a roma tomato, seeds removed, chopped about a 1/3 of a brown or white onion, a couple dashes of cumin and black pepper, a generous dash of salt and chili pepper, and about 1-2 tablespoons of lime. Super creamy and super tasty goodness in our mouths!

Breakfast

I was feeling pretty hungry one morning and decided to make myself an odd but deliciously satisfying breakfast that is definitely out of my norm. I've got two toasts (which are normal) with an egg, a bunch of cherries, a couple of oreos and a small handful of sliced oval pickles and a nice cool class of milk. Mm-mmmmmmmmmmmm. Needless to say, I was ridiculously full from breakfast!

Cheddar cheese, seasoned ground beef, chopped tomatoes and a leafy lettuce.

Fold n half and serve with salsa verde.

Bacon, lettuce and tomato sandwich with mayo and crushed black pepper on toasted buttermilk bread with a small helping of extra sliced tomatoes and pickles on the side = happiness in my tummy!

Drunken Nectarines

Chop up two nectarines.

Place in pan with a little bit of oil, salt and sugar.

You'll need about 2-3tbs.

When the pan is really hot, pour in a bit of disaronno and flambe!

BBQ Salmon

Boyfriend made his bbq salmon by rubbing is secret bbq rub on it, then placed it in a well-Pammed casserole. Then he poured white wine and a bit of apple cider vinegar until it covered only 1/3 of the fillet in height. Place in oven at about 475 degrees F and bake for about 15-17 minutes.

It was another delicious salmon meal. Om nom nom nom. :D

Roasted Salmon with Walnut-Pepper Relish

This walnut-pepper relish is super delish! I made it with 2.5tbs of olive oil, 1 tbs of fresh lemon juice, 1 tsp of honey, 1 diced roasted pepper, seeds and veins removed, a couple pinches of dried parsley, 1 cup of whole walnuts, roasted then chopped, 1/2tsp kosher salt, and 1/8 tsp ground pepper, a dash or two of chili pepper. Then refrigerate. But for the original spicier version, go here

This salmon fillet is about 1.5lbs. First, spray casserole with Pam. Then, coat with a mixture of about 1.5tbs olive oil, 1/2tsp kosher salt, 1/8tsp of black pepper, a generous pinch of dried parsley. Coat both sides of the fillet. Sqeeze about 2 tbs of lemon juice on top.

Bake in oven at 475 degrees F. for 12-14 minutes. Let rest for 5 minutes. 

Place the walnut-pepper relish on top.

Nutella Swirl Buns



The dough is the same as the chocolate swirl buns. However, instead of the chocolate, sugar and butter, I used nutella (about 7-8oz). It isn't as sweet so it's better for the persons who doesn't have that sweet sweet tooth, but still enjoys a yummy dessert.

Another backyard bbq

Visited a friend's place for another smaller version of a backyard bbq with more tasty foodies! There's more ribs, but marinated with a bit of an asian flare, marinated chicken, brats (original bought for the 6/30 bbq... obviously, the hubby and I bought waaaaaaaaay too much food... good thing for more bbqs), corn and hush puppies! Sadly, we didn't take pics of the amazingly tasty and creamy guac with the chips and salsa and the amazing platters of fruit with strawberries, grapes, watermelon, cherries, etc. So much yumminess for the fourth of July! Great food for a great day!

Burgers and cookies

We premade TWENTY burger patties for our backyard bbq last Saturday, 6/30. Out of twelve people invited, nine made it. We had the burgers for dinner. After the bbq, we still had TEN patties left -_-. Thank goodness we made people take some food home with them. :D


Milk n cookies for dessert! These are the cookie in a cookie cookies. :D The inside cookies are store bought and the outside cookies are tollhouse cookies.
