Half mushed Bacon Peas

What you need: 32oz pea bag, 4 tbs bacon fat or olive oil, 1 med sized onion, 1 tsp ground garlic, 1/2 tsp beef bouillon, 2 tbs water, 8 slices of bacon

Chop and brown the onion with the bacon fat/olive oil in a fry pan.

Add in the peas! I added them while they were frozen... then add in the seasonings (garlic and beef bouillon) and extra water if needed.

In a separate fry pan, fry the bacon! You could do this step first and then just cook the onions in the fat... mmmm tasty bacon fat! Chop the bacon and set aside.

Before mixing in the bacon, I took a hand blender and scooped about 1/3 of the peas and blended it in a cup, then mixed it back in. Then, mix in the bacon!

Viola! The most tasty peas ever!

Kimchi Omelette

So, one day the hubster comes home with an awesome idea. Kimchi Omelette! If you think about it, all the flavors seem like it would complement each other deliciously. It's only a bit sad that le hubster has no patience to measure out everything and so everything was eyeballed.

First, we chopped up some kimchi and lettuce.

Then we scrambled 4 eggs.

Then we cooked up some bacon.

And as the bacon cooked, we added the kimchi and lettuce to the scrambled eggs.

Once le bacon was crispy, we dropped in the egg mixture. (No oil was needed because of the bacon grease.) Sprinkle desired amount of salt.

Once the ends were getting really cooked...

Le hubster turned on the broiler and tried his best to cook the inside part of the omelette.

Everything is now pretty much cooked.

And voilĂ , le kimchi omelette is born. It was super deeeeeelicious! I was actually jealous of this keto friendly meal. om nom nom nom nom

Green Beans with Bacon, Tomato, and Parmesan Cheese

The hubster found this recipe a long time ago, back in Aug 13, 2012 to be specific, and emailed it to me. I've had it earmarked since then, but I guess we never bought green beans until recently. And even when I did buy the green beans, it still took me another week or so to actually cook this dish... Well, here it is:

The actual recipe can be found here: Michiana Eats since we just eyeballed the amount of ingredients used... It still came out delicious! (Also, we subbed minced shallot with minced onion and subbed the butter with bacon fat) Om nom nom.

Now I want to make a casserole version and mix in LOTs of grated Parmesan cheese. So delicious!

Pork ribs n Stuff

Dinner for 2/14/2013:
Pork ribs topped with bacon, broccoli, pineapple, and rice for me and my pops.

Keto-friendly: pork ribs topped with chipotle sauce and frank's hot sauce, a dollop of sour cream, broccoli with melted cheese and a couple of bacon slices for the hubby.

Dinner for 2/15/2013:
Rice, cabbage and tofu cooked in the pork rib juice we drained and kept, pork ribs and pineapple for me and my pops.

Keto friendly: Pork ribs covered in chipotle sauce, couple slices of pork belly with a bit of chili paste, and tofu n cabbage and a dollop of sour cream for the hubby.

Another yummy meal, another full and satisfied tummy.

Sausages n Broccoli

Cooking the sausages in some blue moon.

Sausages looking nice n plump. They were transferred onto a hot cast iron once the blue moon evaporated to be browned.

Then we saute'd the broccoli in bacon fat. Once softened, we added the bell peppers and cooked til lightly browned. I think we salted it lightly too (bacon fat is usually already salty).

Keto friendly dinner for the hubster.

Same as previous pix plus rice minus the cheese (ate one of the bacon slices) and has a blue moon in the background. 

Super delicious meal is all I can say.

Champagne Brunch

Scrambled eggs and sausages... really savory and sweet and yumm-i-ness all over!
And bacon, can't forget the bacon! I did them partly extra crispy and partly soft.
I prefer the softer version but my hubby loves the crunch in the extra crispy ones.
And champagne. This one was pretty good. I believe it was a barefoot champagne.
(Not really keto friendly unless it's the only carbs you get for the rest of the day).
I tried to give my hubby breakfast in bed but it just wasn't working... so we brought them back to the desk... haha

Meatloaf!

This is a version of Good Eats Meatloaf from Alton Brown.
Everything is pretty much the same with a few substitutions....
1) Instead of 6oz of garlic-flavored croutons, I decided to make a sweet-ish meatloaf and used 6oz of stale kashi cereal (original).
2) In place of 1/2 tsp cayenne pepper, I added more of the chili powder.
3) In place of 3 whole cloves of garlic, I used 2 tsp of garlic powder.
4) In place of the ground meats, I used 28oz of ground beef and 4oz of bacon, chopped into bits. (Yes, I know I'm short 2oz of meat....)
5) And since I added bacon, I reduced the salt to 1/2 tsp.

Other than that, just follow the recipe as stated and it will be super delicious and moist. While the flavor was awesome, my meatloaf was crumbly. Next time, I would use a really large egg or two regular ones.

And since only 1/2 a bell pepper and 1/2 an onion was called for the meatloaf, I stirfried the remaining and called them veggies! :) We also bought sausages, but those are for another post.


Nom-nom-nom-nom, that's one hella great yummy eats!

Bacon n Cornmeal Waffles



Dry ingredients: 1.25cups all purpose flour, 0.75cup of yellow cornmeal, 2tbs sugar, 1tbs baking powder, 0.5tsp of kosher salt
Add an egg, 6tbs veggie oil and 1.75cups of milk to the dry ingredients. 

Place in waffle maker:
YUMMAY!!!!!! Cornmeal waffle is a tad bit better than regular waffles because it's lighter and has got more of a crunch. Super delish when you add bacon into the mix as well! :D

Bacon, lettuce and tomato sandwich with mayo and crushed black pepper on toasted buttermilk bread with a small helping of extra sliced tomatoes and pickles on the side = happiness in my tummy!

These are a few of our Favorite Eats

 Tomato quesadillas topped with avocado slices. 
These were definitely mouthwatering and my #1 FAV!

 You just can't go wrong with pasta and costco meatballs. The meatballs are so flavorful and juicy!

And bacon, applewood smoked bacon. Heated to a hot tantalizing crisp. 

Tonight's dinner was definitely "da bomb"! :D
