Garlic Salt Spare Ribs

For tonight's dinner, the hubster wanted to make spare ribs a bit different than usual. We did a test batch where the ribs came out too salty but otherwise quite delicious! Here's what we did for our actual dinner:

Take the spare ribs and trim the fat and remove the membrane film thingy. Then cut into manageable sizes.

In a small bowl, mix 2 tbs kosher salt, 1 tbs garlic powder and 1 tbs onion powder. (There may be leftovers depending on how much meat you're cooking up.) Sprinkle this mixture nicely over the top of your spare ribs. If you rub this salt mixture everywhere like what we did with our test batch, it'll end up toooooo salty.

Then you'll need to mix 1/2 cup (8 tbs) water with 2 tbs liquid smoke. Ratio is 4:1.

Pour the diluted liquid smoke into your spare ribs dish. Try not to pour over your ribs as you may wash out the garlic salt mixture. It should just cover the bottom of your dish and then some.

Place in preheated oven of 350°F and bake for 1-1/2 hours. It should look like the above. PS: When it's baking, it smells like the most delicious hot dog ever... I'm pretty sure that's from the liquid smoke :D

The ribs came out amazingly delicious, perfectly salted, and very juicy! It wasn't dry at all. Definitely finger-lickin' good!

Pork ribs n Stuff

Dinner for 2/14/2013:
Pork ribs topped with bacon, broccoli, pineapple, and rice for me and my pops.

Keto-friendly: pork ribs topped with chipotle sauce and frank's hot sauce, a dollop of sour cream, broccoli with melted cheese and a couple of bacon slices for the hubby.

Dinner for 2/15/2013:
Rice, cabbage and tofu cooked in the pork rib juice we drained and kept, pork ribs and pineapple for me and my pops.

Keto friendly: Pork ribs covered in chipotle sauce, couple slices of pork belly with a bit of chili paste, and tofu n cabbage and a dollop of sour cream for the hubby.

Another yummy meal, another full and satisfied tummy.

Pork ribs n Cauliflower mash

Pork ribs covered generously in lemon pepper salt. Then, before baking, drenched in blue moon til almost covered in liquid. It was then covered in foil and baked for 5 long hours in a preheated oven of 475F.

End result is fall off the bones pork ribs. 
We drained the juice and saved it for future stuff...

Pork ribs with cauliflower mash and frank's hot sauce. (I ended up not using the sauce since the ribs were delicious as is). nom nom nom

Spare ribs w/ Steamed veggies



 1. Take a big slab of spare ribs and generously coat it with bbq seasoning.
 2. Place in foil and seal the sides. Leave an opening on one side to pour in sauce, then seal up tightly.


3. Pour in some sauce (3tbs worcestershire sauce, 3tbs apple cider vinegar, a can of beer, and 2tbs amaretto syrup)
 4. Bake in the oven at 250 degrees F for 3-4hrs for maximum juiciness.
 5. Take out of foil pocket and add on a glaze. (Hubby makes the glaze from the juice leftover and reduces it somehow...
 6. Broil just enough til nicely browned, like below.

7. Slice up the ribs. Plate. And enjoy!

We enjoyed our spare rib with a lemontini. Super scrumptious!!!

Fried pickles and spare ribs

My fiance made fried pickle. The item next to the cup of ketchup is actually fried cheese. Both were pretty tasty. The pickles were a bit salty. If only the batter/crumbs stuck better, it would've helped with the saltiness. However, the cruch was totally there and just yumsters!


Spare ribs with steamed frozen vegetable, well, more like microwaved.....
