Pumpkin Banana Nut Bread

I made pumpkin banana nut bread. It's very similar to my Persimmon Banana Nut Bread.
I used 2 bananas and 7.5oz of pumpkin puree (half of the 15oz canned pumpkin). My bananas were frozen so I microwaved them til they were soft enough to mash.
Mash them together.
Mix in 2 eggs.
Add in a 1/2 cup of sugar, 1/2 tsp pumpkin spice, 1/2 tsp cinnamon, 1/4 tsp nutmeg and a 1/2 cup of melted butter.
Fold in 2 cups of all purpose flour and 2 tsp baking powder.
Mix mix mix.
Fold in 1 cup crushed walnuts.
Place batter in a greased loaf pan and bake in a preheated oven of 350 degrees F for about an hour plus 15 - 30 minutes or so.
Ta da!
It's so pretty and you can definitely taste the pumpkin and bananas. Twas very delicious!

Hubby's off-keto weekend breakfast:
Warmed and lightly toasted cinnamon apple scones topped with persimmon butter with a side of chopped banana, homemade whipped cream topped with chopped walnuts. Hubby was a very happy man. :D

Persimmon Banana Nut Bread

Tis the fall season (and Happy Hallow's Eve). What better way to show it than to bake with persimmons!? I took my banana nut bread recipe and subbed two bananas with 2 large persimmons. 
The above photo is a mash of one banana and two persimmons. 
Use a hand blender to puree the mashed fruit unless you like fruit chunks.
Then, mix in 2 eggs, 1/2 cup sugar and 1/2 cup melted butter.
In a separate bowl, mix 2 cups flour, 1.5 tsp baking powder, 1 tsp baking soda, lots of cinnamon, 1/4 tsp salt, 1/4 tsp nutmeg.
Add the flour mix to your mashed fruits.
Fold in 1/2 cup chocolate chips and 1/2 cup chopped walnuts.

Pour batter in loaf pan. Top with more chopped walnuts.
(Note: Lightly press the chopped nuts into the batter.)
Bake in preheated oven of 350°F for 60 minutes or until done.

Personally, it still tasted like a banana nut bread. I must've used a really ripe banana.... Oh wells, still sweet and delicious!

Fruit Salad and Banana Chips

I wanted to make a fruit salad for our bbq today and had been thinking of flavors that would go well together. I thought about white peaches, nectarines and blueberries. Then I found this Blueberry Peach Fruit Salad recipe, which uses the exact fruits I had in mind! Unfortunately, I didn't have fresh thyme on hand and didn't think dried thyme would work that well so I didn't make it. Instead, I added kiwis for an extra tart flavor and hoped that the peaches and nectarines would balance it out with their sweetness. The fruit salad was quite appetizing. I used 2 white peaches, 3 nectarines, 2 cups of blueberries, 1 kiwi and 3 tbs lemon juice. It sat in the fridge for 2+ hours before it was served.


For the banana chips, it's just bananas and lemon juice. The lemon juice keeps it from browning. Pretty much all you do is slice up a banana or two, dip it in lemon juice and bake it in the oven at 200°F or as low as your oven can go for lots of hours until it's chip-like and crunchy. I did mine for 3 hours and some still weren't crunchy.... I would say it was almost like banana jerky, though it was sweet and pretty hard to put down! PS: Do NOT bake on parchment paper. It was difficult removing the slices and I assume harder for the moisture to evaporate -_- Next time, I'd spray PAM on the cookie sheet. If you have a dehydrator, even better! I wish I had a finished picture but I ended up eating them all before I remembered :(

Disaronno Banana Nut Bread

I've been making banana nut breads for a while now and I'm pretty sure I've got my go-to recipe down. However, this time around, I wanted to add Disaronno to it for an almond flavor. Here's what I used:
Dry ingredients: 2 cups flour, 1.5 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon, 1/4 tsp salt, 1/8 tsp ground nutmeg
Wet ingredients: 3 old bananas~ mashed, 2 eggs, 1/2 cup butter~room temp or melted, 1/2 cup sugar, 1/4 cup Disaronno
Optional: 1/2 walnuts, chopped, 1/2 cups semi-sweet chocolate chip, chopped

1. Preheat oven to 350°F.
2. Mix all the dry ingredients in one bowl. Set aside.
3. Mash your bananas first, then add the eggs, then the butter and sugar and Disaronno. Mix well.
4. Then add your dry mix in stages to your wet mix until all the dry mix is well incorporated. 
5. Fold in your chopped waltnuts and chocolates if you want.
6. Spray your bread pan with Pam or butter it down, then pour in your bread batter.
7. Bake it in the oven for 1 hour and 10 minutes or until done.
This is super delicious and perfectly moist with a hint of almond flavor. Perfect. Mm-mmmmm.

Banana Nut Bread with Chocolate Swirls

Mmmmm, doesn't that just look scrumptious!?!?!? It was freshly baked and right out of the oven. It smelled sooooooooo GOOD!!!!

I really wanted chocolate in it, but I didn't want chocolate chips so I took a small handful of semisweet chocolate chips and melted it with a pat of butter in the microwave. I then poured it into the batter and tried to fold it in. I didn't want to stir it in cuz then it'd be a chocolate batter when I really just wanted pretty swirls.

You can't really see the swirls sadly, but it was really awesome! It came out like this:

Banana Nut Bread Comparison

The top banana nut bread used honey, the bottom slice used brown sugar. I'm gonna stick with honey from now on since it looks more appetizing to eat. It was also more moist and soft compared to the brown sugar loaf. But, the brown sugar was a bit dry because I used the same recipe as the honey loaf minus the honey. I had forgotten to add more oil. If I run out of honey and need to used brown sugar, I'm gonna be sure to add more oil so it won't be all dry and crumbly next time. 

Btw, this stuff tastes amazing toasted and topped with butter or jam.

Faux crepe

This is a faux crepe because we used flour tortillas smothered in nutella and added some chopped bananas and rolled it all up. I was a bit skeptical but it wasn't bad at all! I actually had another one afterwards! :D

No bake Banana Creme Pie





Okay, the only thing I baked was the crust.... but the filling was instant french vanilla pudding mixed with mini banana slices and topped with a lot of whipped cream. My bubby ate half of it in a day.... I think he liked it!

French Toast n Cupcake

For breakfast, we ate a sweet cherry chip cupcake with orange flavored frosting, a couple of french toast with some pieces of bananas and some pork belly. 
Twas a pretty hearty breakfast! :D

Banana Choconut Bread




The recipe that I usually use can be found from a previous post: here. However, this time, for the wet portion, I mixed 3 mashed old bananas, 2 eggs, 1/2cup of honey, 1/6cup of oil, and lots of nuts and shredded chocolate (choco chips merely went in the blender). Add the dry portion (flour mix) to the wet portion. Place in glassware and bake in the oven at 350 degrees F. Bake until nicely browned and until you can place a toothpick/chopstick in the middle and pull out cleanly. This version turned out to be quite decadent and moist and finger-licking good with all the chocolate pieces!!

Strawberry Banana Milkshake

About 10 frozen strawberries, two bananas, about a 1/3cup of greek yogurt and a half cup of milk (not shown) as well as 5-6 ice cubes (also not shown) makes 3 heavenly cool cups of strawberry banana milkshake.

Banana Nut Raisin Bread

To get this yummy bread, mix 2c flour, 1.5t baking powder, 1t baking soda, lots of cinnamon, 1/4t salt, 1/8t nutmeg. This is your flour mixture. In a second bowl, mix 3old bananas mashed with 2 eggs, 3/4c sugar, and 1/2c oil. Add this to the flour mixture and mix thoroughly. Mix in lots of walnuts and raisins to your hearts' desire. Pour batter into glassware and bake for about an 1hr at 350 degrees Fahrenheit.

In the next 10 minutes (where it was supposed to cool off), almost half of the loaf was gone! 

Good thing tomorrow we're going to get more bananas!

then serve with mint as garnish.

There you have it. Remarkably healthy, delicious banana ice cream!
