Roast Beef n Cheese Rollups

Well, whaddaya know? Adding lettuce to the Roast Beef n Cheese Rollups makes it taste much more like a sandwich. You really don't need the bread! Picture below is iceburg lettuce covered in sliced smoked gouda cheese covered with a deli slice of roast beef slathered with mayo and then topped with freshly cracked black pepper. It's super yumster and a keto friendly version of a sandwich.

Kimchi Omelette

So, one day the hubster comes home with an awesome idea. Kimchi Omelette! If you think about it, all the flavors seem like it would complement each other deliciously. It's only a bit sad that le hubster has no patience to measure out everything and so everything was eyeballed.

First, we chopped up some kimchi and lettuce.

Then we scrambled 4 eggs.

Then we cooked up some bacon.

And as the bacon cooked, we added the kimchi and lettuce to the scrambled eggs.

Once le bacon was crispy, we dropped in the egg mixture. (No oil was needed because of the bacon grease.) Sprinkle desired amount of salt.

Once the ends were getting really cooked...

Le hubster turned on the broiler and tried his best to cook the inside part of the omelette.

Everything is now pretty much cooked.

And voilĂ , le kimchi omelette is born. It was super deeeeeelicious! I was actually jealous of this keto friendly meal. om nom nom nom nom

Steak n Salad

For tonight's dinner, we had a good old fashion American dinner. I'm guessing that usually means steak, right? Anyhoo, we had steak and salad. My hubby usually makes the steak via Alton Brown style (mostly cooked in the oven), but tonight he tried it Gordon Ramsay style (cooked entirely on the stove top).

First, you need to bring your steaks out to room temperature. Let it sit out for about an hour or so before you cook it.

When your steak is at room temp and you're ready to cook it, heat up a cast iron skillet on high. Then, sprinkle your steaks with salt (we used sea salt) and freshly ground pepper.

Once your cast iron skillet is hot, add oil. Then place your steak in the skillet. Sear each side for 3-4 minutes for medium rare, then flip the steak. About 1 1/2 minutes on the second side, melt butter into the pan.

Finally, serve on a bed of lettuce (or on the side) and let it rest for 10 minutes.

and mine (I did a halfsie with my pops & my hubster kindly (and without asking) sliced up our steak. It was mm-mmm delicious)

Super fast and super simple. Even I could make it! :)

Salmon and Salad

Not keto friendly - Red leaf lettuce with manzanilla olives, pork, salmon, salmon skin with a dollop of cream cheese, and rice with coconut flour gravy. Super yum! And the coconut gravy turned out deliciously over rice! 

Keto friendly - red leaf lettuce with salmon skin, salmon, coconut bread crumbles, and chicken. My hubby liked it!

A lil bit of Everything

This is pretty much the same as last night's dinner with the kimchi pork bellies, lettuce and beef n eggs. Tonight we made rice though and added some kimchi. This kimchi was way more spicier than the first bottle we bought. If only we could read korean....

Beef n Eggs with Porkbelly and Lettuce

We made beef n eggs with ground beef and scrambled eggs. This time we ate kimchi marinated porkbelly (already bought pre-marinated) with lettuce. The beef and eggs were kinda bland despite a good dose of salt and pepper. It needed a kick to it so we added smoked chipotle hot sauce to it and it was much tastier. Omnomnomnomnom

Shortplate Scrambled Eggs n Broccoli

For tonight's dinner, we enjoyed shortplate with onions seasoned only with salt and pepper over a bed of lettuce, scrambled eggs with chopped green onions and lightly salted, and sauteed broccoli w/onions, again, lightly salted to taste. Everything was just delectable!
