Crumbly peanut butter cookies

Yup, these cookies sure do crumble easily. Maybe best to use as peanut butter crumble on top of some other delicious bakery. This is also keto friendly.
The above dough is made with 1 egg, 1 cup peanut natural butter, 1/4 cup splenda, 1/2 tsp vanilla extract, and 1 tbs coconut flour. Mix til well incorporated.

Scoop out a mountain high tablespoon and then flatten with fork. Bake in preheated oven of 350 F for about 12 minutes. Cookies will crumble! (Will try this again with 2 eggs to see if the cookies hold better)

They look pretty good. And it tastes pretty sweet too. Think I'll cut down on the splenda next time as well.
