Perfectly Crunchy and Moist Waffles

I wanted to try a new waffle recipe and came upon this one
You need: 2 eggs, 2 cups all-purpose flour, 1 3/4 cups heavy cream, 1/2 cup oil, 1 tbs sugar, 4 tsp baking powder, 1/4 tsp salt, 1/2 tsp vanilla extract.
It was so amazing! Its got this super crunch on the outside and was super soft and moist on the inside. I'm pretty sure its because of the heavy whipping cream that we subbed in for the milk. This recipe is a definite keeper!

Made my hubby and me a breakfast burrito. Scrambled some eggs, added the chopped bellpeppers and mushrooms and cheese. Roll it all up and brown the tortilla. Twas yummy!!

Pancakes

Le hubby and I were craving pancakes since we don't make it all that often. A simple search and I found two recipes I wanted to try. The first pic was a recipe for tall and fluffy pancakes and the second pic was for a delicious old fashioned pancakes.
These pancakes were visually appealing and tasted quite yummy. It was definitely very fluffy and airy but fulfilling! Hubby topped his pancakes (or rather I topped his pancakes) with strawberry jam, sliced bananas and frozen blueberries. I should mention though, we did get a slight stomach ache a few hours later and I think it had to do with the milk and vinegar combo.... Maybe I'll try lemon juice instead of the vinegar?...

Another delicious tasting pancakes with no tummy aches later. Can't go wrong with such a simple recipe. I also believe it's the same ingredients in Chef John's recipe. This time I added blueberries IN the pancake batter. I'm pretty sure blueberry pancakes are my fav! This one is topped with sliced bananas, whipped cream, walnuts and a sprinkle of cinnamon. Mm-mmm yummy!!

Orange Marmalade

I was watching the Food Network channel when Ina Garten (Barefoot Contessa) was on showing a few easy recipes to make for the holidays. One of them was truffles and the other was orange marmalade. Ever since, I had been wanting to make both the truffles and orange marmalade even though this household had never once bought orange marmalade before. (We've had truffles before). I was going to use our neighbor's oranges that hangs over on our side, but I tried one of them and they were still tart so away to Costco I went and just bought a bag. It was even better bc the Costco oranges were seedless. Whoohoo!

To make orange marmalade, I used 8 cups water, 4 navel oranges, 1 huge lemon, 6 cups sugar and 1/2 cup honey.
Chop off the ends of the orange, cut in half, and then slice. Repeat for all oranges.

(I only needed 1 lemon since our homegrown lemons are as large as a regular orange). Slice same as oranges. Remove seeds as you slice.

Throw all slices in a pot of 8 cups of water.

Bring the mixture to a boil, stirring often. Took about 30 minutes. Remove from the heat. 

Stir in the 6 cups of sugar until it dissolves. 

Cover and allow to stand overnight at room temperature.

The next day, bring the mixture back to a boil. Reduce the heat to low and simmer uncovered for about 2 hours. Stir in 1/2 cup of honey. Turn the heat up to medium and boil gently, stirring often, for another 30 minutes. Cook the marmalade until it reaches 222°F. 

Sterilize, then fill four pint jars. Wipe the rims thoroughly with a clean damp paper towel, and seal with the lids. Store in the pantry for up to a year.
They are such a pretty golden color! The very next day, I added marmalade to my oatmeal and it was super yummy! Also delicious on top of waffles and toast! :o)

Sidenote: I may reduce the sugar to 5 cups next time maybe add more honey instead.

One breakfast morning...

Hubby's off-keto weekend breakfast:
Warmed and lightly toasted cinnamon apple scones topped with persimmon butter with a side of chopped banana, homemade whipped cream topped with chopped walnuts. Hubby was a very happy man. :D

Holiday Waffles


To make Holiday Waffles, add persimmon butter to your waffles, sprinkled with chopped walnuts, topped with whipped cream, drizzled with honey and sprinkled lightly with cinnamon powder.
I eat my holiday waffles folded up like a taco to keep all the goodies in one bite. Mm-mmm!

Cheese n Tomato Toasts

I am 100% over food poisoning. Hooray! For that, I made fancy toasts today. Toasted up a couple of slices of sourdough bread. Slathered Laughing Cow's Creamy Swiss Cheese (did not see that it was a light version. lucky for me, it still tasted yumsters!). Sliced up a fresh homegrown roma tomato from the Shis. Sprinkled with crushed sea salt and black pepper. Served with a side of green grapes. It was amazingly delicious in my tum-tum! Definitely, a fav!

Coconut bread toasts

This coconut bread was made without the splenda per hubster's request. For breakfast, he toasted a couple slices, placed a dab of unsalted butter and gave it a pinch or so of kosher salt. It was pretty yummy for a simple breakfast. Mm-mmm!

Champagne Brunch

Scrambled eggs and sausages... really savory and sweet and yumm-i-ness all over!
And bacon, can't forget the bacon! I did them partly extra crispy and partly soft.
I prefer the softer version but my hubby loves the crunch in the extra crispy ones.
And champagne. This one was pretty good. I believe it was a barefoot champagne.
(Not really keto friendly unless it's the only carbs you get for the rest of the day).
I tried to give my hubby breakfast in bed but it just wasn't working... so we brought them back to the desk... haha

Apple Cinnamon Oatmeal

I like oatmeal for breakfast, but let's face it, sometimes, it's just plain boring. This morning I spiced up my oatmeal with an apple, cubed, cinnamon and a bit of sugar.

For two servings (my da and I) of oatmeal, I boiled 1-3/4 cups of water, added the cubed apples and let cook for a minute or so. Then I added 1 cup of 1 minute quick oats and let cook for a minute. Then add as much cinnamon as you like and top it off with a bit of sugar for added sweetness.

It was mm-mmm delicious! :D

Pop tarts for breakfast

I've been eating a pack of pop tarts for breakfast instead of my usual oatmeal to help me gain a little bit more weight. We bought the huge costco pack. It's pretty yummy-licious considering I haven't had these since maybe 5+ years ago. Pop tarts and milk. You can't go wrong for breakfast! :D

French Toast n Cupcake

For breakfast, we ate a sweet cherry chip cupcake with orange flavored frosting, a couple of french toast with some pieces of bananas and some pork belly. 
Twas a pretty hearty breakfast! :D
