Sausage and Salad

Tonight's dinner was too pretty not to post. 
(Keto friendly version is don't eat them raspberries and tomatoes!)

The salad is just green leaf lettuce with chopped roma tomatoes and raspberries.

Leftovers

Keto friendly dinner for hubby - broccoli n cheese, regular sausage, chinese sausage (be sure to check carbs before buying, this one happened to have 1g carb per sausage) and overeasy eggs with chipotle sauce.

Regular dinner for pops and me - chinese sausages and broccoli bell pepper n rice.

Sausages and Cauliflower mash

Sausages and cauliflower mash with rice.
Keto friendly - Sausages and cauliflower mash and kimchi and lots more cheese

This was another tasty and fingerlickin' awesome meal. Just looking at these pictures make me crave more of the beer cooked sausages and cauliflower mash. MM-mmmmmmmmmm. 

Cauliflower mash recipe:
Take a head of cauliflower and remove the things you don't eat like the stems and leaves. Give it a rough chop and then boil until soft (about 5-7 minutes). Once the cauliflower is soft, drain the water from the pot. Season with salt and pepper and some cheddar cheese. Let sit for a bit (maybe a minute) to let the cheese soften. Then take a meat pounder and mash the cauliflower. Super easy and super different from just plain ole cauliflower. Did I mention it is super yummy too?

Sausages n Broccoli

Cooking the sausages in some blue moon.

Sausages looking nice n plump. They were transferred onto a hot cast iron once the blue moon evaporated to be browned.

Then we saute'd the broccoli in bacon fat. Once softened, we added the bell peppers and cooked til lightly browned. I think we salted it lightly too (bacon fat is usually already salty).

Keto friendly dinner for the hubster.

Same as previous pix plus rice minus the cheese (ate one of the bacon slices) and has a blue moon in the background. 

Super delicious meal is all I can say.

Sausage w/ Tofu n Shortplate

The sausages were delicious. Super savory and sweet and very juicy! Then we have our stirfried tofu with short plate and chili sauce for a spicy kick. YUM!

Champagne Brunch

Scrambled eggs and sausages... really savory and sweet and yumm-i-ness all over!
And bacon, can't forget the bacon! I did them partly extra crispy and partly soft.
I prefer the softer version but my hubby loves the crunch in the extra crispy ones.
And champagne. This one was pretty good. I believe it was a barefoot champagne.
(Not really keto friendly unless it's the only carbs you get for the rest of the day).
I tried to give my hubby breakfast in bed but it just wasn't working... so we brought them back to the desk... haha

Duck, Sausage, n Salmon

Dad's plate - he's from Hawaii so he's gotta have his rice. In addition to his rice, he's got salmon (on top), duck (on left) and sweet sausage slices (on bottom). While the picture isn't exactly mouth-watering, the meal certainly was.
Hubby's plate (keto-friendly) - duck to your left, salad in the middle, and salmon with a dollop of cream cheese on your right. Mmmmmm.
My plate (also keto-friendly) - I got salmon skin on the left, duck meat on top, followed with leftover broccoli, leftover kimchi, leftover tofu, couple of sweet sausage slices on bottom and leftover shredded chicken with bbq sauce in the middle (ps: the bbq sauce is totally NOT keto-friendly).

Cheese n Sausage

So, we went on a rare trip to Target because I had rec'd a gift card. Yay for gift cards! :) 
I bought stuff and had a few dollars left over and decided on fontina cheese and hickory farms summer sausage. MM-mmmmm!

Omity om nom nom! The fontina cheese reminded me of a softer mozarella cheese. Super yummy!  We were going to use it to make fondue but we ended up just eating it all... that's how yummy it was! As usual, the sausage was really good too. It's also keto friendly (but not the honey mustard). We heart munchies <3 p="p">

Noodles and some Munchies

For lunch, we kept it simple. Boiled some noodles, added a bit of kimchi, green onions, fish cake and a fish ball. This dish is really simple and great when you're craving some noodles during the winter!
For our 3 o'clock munchies, we ate some sliced cheddar cheese with sliced summer sausages and some manzanilla olives. MMMM!
