Short Plate and Broccoli

Stir-fried short plate with caramelized onions and long stringy mushrooms, whose name I never learned. Seasoned with salt and pepper. Boiled broccoli for 1-2 minutes. Made rice in rice cooker. Plate everything, then eat everything. :D

Sliced Asiago and Sopressata Salami



So we went to Trader's Joe to stock up on cheapo wine to cook with later when I saw these. Asiago cheese with sopressata salami. I've never tried that kind of cheese nor that kind of salami and decided to get it. Man, the asiago cheese is smelly. I can't really describe the flavor but I can tell you that it's not sweet, savory or creamy. I think it's an acquired taste. It does go well with the salami though. We heart salami! It also goes great with guacamole and crackers!

Baked Chicken w/ Salad

Because my fiance is on a keto diet, we changed our chicken brine from salt and sugar to salt and herbs (thyme, rosemary, a bay leaf, n black pepper). It's still pretty tasty and the aroma is simply amazing. Brined and baked chicken is THE best dish ever. If you add ketchup and Frank's hot sauce together, you get an even more flavor kick, which is SO good with the chicken!

SalmonSkin-wich

Basically, we pan-fried salmon skin with olive oil and lightly salted it. We smeared cream cheese on it. Then placed it in between double sheets of salted and roasted seaweed. Totally yumsters and way better than our original salmon skin. A+++++++++

It's homemade so it's on my blog. Also, I can't make apple pies. They turn out runny for me... :( Good thing I have an Aunty Kay AND an Aunty Pearline (she make other yummy pies such as chocolate pudding pies and banana creme pies) Yay for aunts!

Pop tarts for breakfast

I've been eating a pack of pop tarts for breakfast instead of my usual oatmeal to help me gain a little bit more weight. We bought the huge costco pack. It's pretty yummy-licious considering I haven't had these since maybe 5+ years ago. Pop tarts and milk. You can't go wrong for breakfast! :D

Pickled daikon and carrots

Chop up one part carrots, one part daikon into thin strips. Cover with water. Add 2 tbs white sugar, 3 tbs salt and 3 tbs vinegar. Taste till desired flavor and add ingredients as needed. Let sit for at least 1 hour or until you can bend the strips of daikon/carrot in half without breaking. Refrigerate.  

Then eat your heart out!
MMMMM - so deliciously sweet and sour and savory all at the same time! It's the best side dish one could ask for!

Beef Shank Stew w/ Red Beans

Beef shank

carrots + potatoes + leftovers seasoned red beans and red bean soup + celery + salt + bay leaves + cumin + chili powder + black pepper + chicken bouillon + other spices 
Dump all ingredients except for celery into slow cooker + water to cover and then some and let cook all day. An hour before serving, add the celery.

Serve with rice and voila, you've got a scrumptious meal that'll last a while. It'll be great not cooking for a bit :D

Lotta Good Stuff

Sorry, couldn't think of a name that included oysters, brown rice, roasted tomatoes, homemade red beans and shortplate n cabbage. But that's what we ate today and everything was just super tasty!

I have to say, these oysters are big in size compared to eating them at restaurants (with the exception of Geoffry's). We also bought them for 89 cents per. Super cheap compared to ordering a dozen for $30. We could buy 12 for under $12! But we only bought three...


And for dinner: 
Homemade red bean and onions: 1. Boil a bag of red beans with water. I think the ratio is 1:3 for cups of dry bean and water, respectively. Bring to a boil for about 2-3 minutes and cook for 10 minutes. Turn off heat and let beans sit for 1 hour.   2. In the meantime, chop up a medium sized onion. Pour in a can of chicken broth into a slow cooker. Add a bay leaf and season with salt, ground cumin, garlic, etc, pretty much anything you like. 3. After the hour is over, drain the beans and add to the slow cooker. Add more water, making sure it's about an inch over the beans. Slow cook away until beans are easily mushed. 

Shortplate (beef slices) with cabbage and mushrooms. Seasoned with salt and pepper.

Tomatoes roasted lightly in olive oil and a sprinkle of salt.

Mmmmmmmmmmm!

KBBQ

Korean BBQ right in our own home! 
All you need is a portable gas burner, a pot and food! It also helps to have a splatter guard. 

There's sliced cabbage and long stemmed mushrooms on the top left corner with leftover Szechwan Shrimp on its right. The pot with the splatter guard on top is in the middle. We had sliced short plate and rib-eye for meats along with thick slices of pork belly to the far right. We also used galbi marinade (red capped bottle) to cook our food with for yummy flavor. On our plates, I premade rice noodles with a spicy sauce. There's also more daikon. The other side sauces in the three small metal bowls were: sesame oil with kosher salt, chili sauce and this lime soy sauce thing that we bought just to try. Twas delicious! Everything was just so scrumptious and even more so since we enjoyed this in the comfort of our own home :D

Szechwan Shrimp and Soba

Ingredients: 1/2 cup water, 1/4 cup ketchup, 2 tbs soy sauce, 1 tbs and 1 tsp cornstarch, 2 tsp honey, a pinch of crushed red pepper, 1 tsp minced ginger, 2 tbs vegetable oil, a handful of green onions, sliced, 8 cloves garlic, minced and 1-1/2 pounds tiger shrimp (raw), tails and vein removed.
Instructions: 1. In a bowl, stir together water, ketchup, soy sauce, cornstarch, honey, crushed red pepper, and ground ginger. Set aside. 2. Heat oil in a large skillet over medium-high heat. Stir in green onions and garlic; cook 30 seconds. Stir in shrimp, and toss to coat with oil. Cook til just plump. Then, stir in sauce. Cook and stir until sauce is bubbly and thickened.

Tuna Egg Sandwich w/ Cheese

Tuna sandwich made with two toasted whole wheat bread slices. On the left, we have a leafy lettuce topped with tuna and mayo. On the right we have sliced american cheese topped with sliced boiled eggs. 

Btw, for almost perfect to perfect boiled eggs, boil for about 10 minutes. Let sit for a minute or two and then crack open and eat your heart out! :D The yellow yoke should be moist and not dried out.

Pork pork pork

Pork bellies on a bed of leafy romaine lettuce. 
The lettuce balances out the oiliness of pork bellies making you want to eat more of this yummy goodness.

We never eat wet dumplings anymore because my bubby LOVES potstickers! I have to agree that potstickers are quite delicious and even more so when they're homemade! :D 
These were from the last batch I made. They're super delicious even after freezing for a month or two! Best comfort food ever!!!!!!

Soba w/Sliced beef and green onions

This is pan fried sliced brisket with green onions and those long stringy mushrooms. Seasoned with salt and pepper and a little drizzle of sesame oil.

The first picture placed on a bed of soba noodles. Mmm, asian foods! :)

ps: all soba noodles are served with soba sauce....

Sliced baked Yam

After baking potato wedges, we decided to try making yam chips. We sliced a yam as thin as possible and let air dry for a couple hours in the fridge. Our thought was that if it dries out, the chips will come out crispier. Well, I can't be sure that worked but some were crunchy and others were still slightly soft. Either way it was delicious. The yam slices were coated with extra virgin olive oil and seasoned lightly with salt and pepper for taste. Bake until browned or almost burnt since it was kind of hard to tell whether it was browning or not....

Costco Pizza and Homemade Fries

Sliced potatoes were coated with extra virgin olive oil and sprinkled with salt and pepper then baked until nicely browned. Super yummy!

And we always love costco pizza too!

Monster burrito

The first layer on a burrito is cheese and LOTS of it! The second layer is shown above and is made with leftover rice, julienne chuck beef, chopped onions and seasoned with salt and pepper.

The third layer is a tomato guacamole.
Roll it all up in a 10-12 inch tortilla and you've got something super duper tasty to chomp on for dinner!
